A satisfação da dieta hospitalar e suas implicações na saúde

Abstract

Introduction: Even with the growing advances in health, malnutrition remains prevalent in the reality of brazilian hospitals, common situation in others countries, accounting for changes in body composition and complications during and after the admission. One of the factors that positively and negatively influence the nutritional status and the clinical evolution of the patients is the acceptance of the hospital diet, which being increasingly linked to several factors, associated to the disease or not. Methodology: For this study, the review of studies published between 2001 to 2013 was performed in adults. Results: These results, most patients had some degree of overweight or obesity, weight loss despite moderate to intense presented by the authors as existing in both sexes, though prevalent in males. Patients with weight loss, did not show good acceptance of the offered diet. Regarding the acceptance of diet, breakfast was the meal with the highest positive rating. The items with the lowest assessment at lunch and dinner were the spice, quantity and variety. Conclusion: The sensory amount and the time of admission are important and influential factors in the acceptance of the hospital diet, the adaptation of the hospital kitchens is necessary in promoting of the recovery of nutritional status in quality of life during the admission and in food hospital and nutritional education in situations of hospital discharge.
